Ingredients
7 ounce Hot Smoked Salmon, flaked with a fork
8 eggs
5fl ounce Milk
10 ounce Asparagus
2 tablespoon finely chopped chives
Salt & Black Pepper
Olive Oil
Directions:
Heat a grill or broiler. Trim and cut asparagus into 1 inch pieces. Blanch in boiling water for 1 minute, and then drain. In a bowl, whisk together eggs with milk, chives, salt, and pepper. Set asparagus tips to the side, and mix remaining with egg mixture and flaked salmon. Heat the olive oil in a large pan. Add the egg mixture and cook till set. Put reserved asparagus tips on top of frittatas when half cooked. Add the frying pan under the grill to finish setting the frittatas. Serve on top of fresh greens.
