2 pounds salmon fillets with skin still intact
½ cup unsalted butter, melted
1 tablespoon brown sugar
1 tablespoon lemon juice
3 cloves garlic, minced
½ teaspoon dried oregano
½ teaspoon thyme
½ teaspoon dried rosemary
2 tablespoons chopped fresh parsley leaves
salt and ground black pepper to taste
Preheat the oven to 375 degrees F. While the oven is preheating, take a small bowl and whisk together the melted butter, brown sugar, salt, pepper, rosemary, oregano, thyme, lemon juice and garlic. Whish carefully, making sure that everything is properly mixed together.
Take a baking sheet and line it with aluminum foil. Arrange the salmon fillets on the baking sheet with its skin facing down. Make sure that the fillets are not on top of each other. Using a spoon, douse the fillets with the butter and herbs mixture.
Fold the sides of the aluminum foil over the salmon. Make sure to completely cover the salmon fillets and seal the packet closed. Place it into the preheat oven and bake it until cooked which should take around 15 to 20 minutes. It should take around 15 minutes for a rarely done salmon, and 20 minutes for it to be thoroughly cooked.
Take it out of the oven and arrange the salmon fillets on a serving plate. Garnish with parsley.
For added taste and zest, you can squeeze in a wedge of lemon to the salmon after baking. Topping the baked salmon with cheese will also add to the flavor.
